In Tinajo, an ecological family project takes a leap: the Finca Vegacosta restaurant opens, where everything cooked is hand-grown on the same farm, with no intermediaries and a zero waste philosophy.
The volcanic heart of Lanzarote now has a new temple of sustainable cuisine this summer. Finca Vegacosta, a family project that began fourteen years ago, has just opened the doors of its restaurant on Camino las Gavias, in Tinajo. Here there are no suppliers or cold storage accumulating kilos of plastic: everything served is hand-grown on the same plot, just a few metres from the kitchen.
From farm to plate without intermediaries
Antonio Morales, the restaurant owner, explains it clearly:
“Finca Vegacosta is an ecological farm and from it a restaurant has emerged, but the foundation is the farm. We grow local products.”The proposal is radically local: vegetables and herbs are grown one hundred percent organically and go directly from the earth to the kitchen. “Here the proposal is from farm to table, and there isn’t a kilometre,” adds Morales.
The drip irrigation system allows for year-round production. Lettuce, sweet potatoes, potatoes, onions, watermelons, melons, leeks, celery, grains… the farm supplies the restaurant without relying on external markets. This not only guarantees freshness but also drastically reduces the carbon footprint of each dish.
A menu that fuses tradition and innovation
The cuisine at Finca Vegacosta combines Canarian tradition with contemporary touches. The black pig from Tinajo, kid, goat, moray eel, old fish, and bream are some of the products featured on the menu, always seasonal and with a firm commitment to the zero waste philosophy. “There is a base, we work with the black pig from Tinajo, kid, goat, moray eel, old fish, bream, and we make our salads,” details Morales.
The restaurant not only serves meals but also operates as a direct sales point for the farm's harvests. The residents of Tinajo and tourists who visit can take home the same products that are cooked at the tables. This is a commitment to the local economy and food transparency that, in an island like Lanzarote, where water and land are scarce resources, makes special sense.
A haven for lovers of authenticity
The rural setting of Tinajo, with its volcanic landscapes and fields, is the perfect backdrop for this proposal. Finca Vegacosta opens from Thursday to Monday on Camino las Gavias, and is already shaping up to be a gastronomic reference for those looking to taste Lanzarote in the purest and most conscious way. Eating here is, in a way, a journey to the origins of food: to manual labour, to the cycles of nature, and to a way of understanding cooking that avoids artifice.
For the visitor, the experience goes beyond the plate.
